The golden egg sought by many of London’s young food start-ups is investment: a period of rapid growth that proves profitability—and then a big bucks sale.
But Mary Hillard of Mary’s Milk Bar in Edinburgh, whose daily changing menu of ice cream and fresh chocolates has had people queuing around the block since the summer of 2013, couldn’t give a damn about the investors. When they came knocking last summer, her staff politely told them to “fuck off.”
